Receta de Fideuá de Gandía tradicional

For a family meal, prepare a Fideuá; it is a typical and very tasty dish from Gandia, made with noodles and seafood.

Preparation

 

  1. Chop the fish (for example, the angler head and small fry) and cook in a large pan with one litre of water and some sprigs of parsley for 15-20 minutes. Season. Sieve and put aside. For this step, you could also use ready-made stock bought from a supermarket, but homemade stock is tastier.
  2. Put a dash of oil into a paella dish. When hot, add the Norway lobsters and prawns, and sauté them well. Remove and put aside.
  3. Peel and finely chop the garlic cloves, adding them to the paella dish. Also add the paprika (very important in this dish as it is typical) and leave for a while. Grate the tomato and add. Stir and add the chopped angler tail. Season with salt and pepper and fry a little longer so that it takes on the colour and flavour of the other ingredients.
  4. Then, add the noodles, gently fry for a short time and pour in the fish stock. Add salt to taste and sprinkle with chopped parsley. Leave to boil at normal heat for 10 minutes. Simmer for another 5 minutes. Once we have turned the heat off, we add the Norway lobsters and prawns, as well as add any stock left over. Cover with a cloth and leave for a few minutes more. If you wish, you can decorate with a lemon and a sprig of parsley.
